Ethiopia โ€” Yirgacheffe

The birthplace of coffee. Yirgacheffe coffees are prized for their intense floral aromatics and bright fruit-forward acidity. These beans are grown at 1,800โ€“2,200 meters elevation, which slows ripening and concentrates sugars in the cherry.

Sumatra โ€” Mandheling

Sumatran Mandheling is unlike any other coffee. Processed using the unique "wet-hulled" (Giling Basah) method, these beans develop a distinctive earthy, herbal character. The tropical climate at 1,200โ€“1,500m produces a full-bodied, syrupy cup with very low acidity.

Brazil produces 40% of the world's coffee, but Sul de Minas specialty beans are another story. Low altitude, natural processing, and large peaberry varietals create smooth, low-acid coffees with incredible body and nutty sweetness โ€” perfect for espresso blending.

Light Roast โ€” The Terroir Roast

Internal temperature 356โ€“401ยฐF (180โ€“205ยฐC). Light roasts preserve the most origin characteristics โ€” the floral, fruity, and complex flavors developed in the growing region. Contrary to myth, light roasts have slightly more caffeine than dark (heat degrades caffeine). Acidity is highest, body is lightest. Best for: pour over, Chemex, Aeropress.

Medium-Light Roast โ€” The Sweet Spot

Internal temperature 401โ€“437ยฐF (205โ€“225ยฐC). The "City Roast" level. Origin flavors are still clearly expressed but caramelization begins, adding sweetness. A balance of brightness and body that appeals to a broad range of palates. Ideal for those who love Ethiopian or Colombian coffee at its most expressive.

Medium Roast โ€” The Classic

Internal temperature 437โ€“455ยฐF (225โ€“235ยฐC). "Full City" roast. The most popular roast level in specialty coffee. Balanced acidity, medium body, caramel sweetness, and still-present origin notes. Works beautifully in drip coffee, French press, and pour over. The roast most people picture when they think "specialty coffee."

Medium-Dark Roast โ€” The Bold Choice

Internal temperature 455โ€“473ยฐF (235โ€“245ยฐC). "Full City+" or "Vienna" roast. Roast flavors (caramelized sugars, dark chocolate, bittersweet notes) now dominate over origin characteristics. Full body, lower acidity, some surface oil visible on beans. Excellent for espresso and milk-based drinks where you want the coffee to stand up to foam and steamed milk.

Dark Roast โ€” The Roaster's Statement

Internal temperature 473ยฐF+ (245ยฐC+). "French" or "Italian" roast. The bean's oils migrate fully to the surface. Flavor is dominated entirely by the roasting process: dark chocolate, char, smoky, sometimes ashy notes. Very low acidity, full-heavy body. Best suited for espresso, cold brew, or those who love a bold, decisive flavor. Origin character is largely gone.

Rinse the filter: Place filter in the dripper and pour hot water through it to remove paper taste and preheat the vessel. Discard rinse water.

Add and level coffee: Add your freshly ground coffee and give the dripper a gentle shake to level the grounds. Create a small indent in the center with your finger for more even extraction.

Bloom: Start your timer. Pour 50ml of water (about 2x the coffee weight) in a slow spiral from center to edges. All grounds should be saturated. Let bloom for 30โ€“45 seconds. You'll see bubbles โ€” this is COโ‚‚ releasing from fresh coffee.

Pour in stages: Pour in slow, controlled spirals. At 45s, pour to 150ml. At 1:15, pour to 250ml. At 2:00, pour to 350ml. At 2:30, pour final water to 400ml. Maintain water level by pouring before the bed runs dry.

Finish: Coffee should finish draining at 3:00โ€“3:30. If too fast (<2:30): grind finer. If too slow (>4:00): grind coarser. Once draining stops, swirl your cup gently to integrate, and enjoy immediately.

Preheat: Fill the French press with hot water to preheat, then discard. This maintains brewing temperature throughout the steep.

Add coffee and water: Add coarsely ground coffee, then pour all hot water at once. Stir gently to ensure all grounds are submerged. Place the lid on with the plunger pulled up โ€” don't press yet.

Steep for 4 minutes: Don't stir or agitate during this time. A crust of grounds will float to the top โ€” this is normal. The full-immersion brewing extracts maximum body and oils.

Break the crust: At 4 minutes, use a spoon to break the grounds crust. Scoop off the floating grounds with a spoon โ€” this removes fines that cause bitterness.

Press slowly and pour immediately: Press the plunger down with slow, steady pressure. This should take 20โ€“30 seconds. Pour ALL coffee immediately into cups or a carafe โ€” coffee left in the French press will over-extract and turn bitter.

Inverted setup: Place the AeroPress upside down (plunger at bottom). Add wet filter to the cap. Add coffee to the chamber.

Add water and stir: Pour water to the #4 line (about 200ml). Stir vigorously 10 times to saturate all grounds. This method rewards aggressive stirring.

Steep 60 seconds: Press the filter cap firmly onto the chamber. Steep for 60 seconds total.

Flip and press: Carefully flip the AeroPress onto your cup (use a heavy mug). Press down with steady pressure over 20โ€“30 seconds. Stop when you hear a hissing sound โ€” don't press all the way through.

Dilute if needed: The AeroPress produces a concentrate. Add 30โ€“50ml hot water to your cup for a standard cup strength. Experiment freely โ€” the AeroPress is wonderfully forgiving.

Purge your machine: Flush the group head with hot water for 2โ€“3 seconds before pulling a shot. This clears residual grounds and stabilizes temperature.

Dose precisely: Grind directly into the portafilter. Use a scale to confirm 18g (or your target dose). Consistency in dose = consistency in shots.

Distribute and tamp: Use a distribution tool or finger to level grounds. Tamp with firm, level pressure (approximately 30 lbs). A level tamp prevents channeling (water finding a short path through the puck).

Lock in and start the shot: Lock the portafilter into the group head and start immediately. Target 25โ€“30 seconds extraction to produce 36g of espresso output.

Diagnose and adjust: Shot under 25s โ†’ grind finer. Shot over 30s โ†’ grind coarser. The goal is a dark, viscous stream that transitions from brown to caramel blonde without fully blonding out.

Coarse grind: Grind coffee to the coarsest setting โ€” similar to rough sea salt. Fine grounds will over-extract and create bitterness in the long steep.

Combine and stir: Add coffee to a large jar or pitcher. Pour cold filtered water over the grounds. Stir thoroughly to ensure all coffee is saturated.

Cover and refrigerate: Cover with a lid or plastic wrap. Refrigerate for 12โ€“24 hours. 12 hours produces a lighter, brighter concentrate; 24 hours creates a richer, fuller-bodied result.

Filter twice: Pour through a cheesecloth or coffee filter placed in a strainer. Then filter again through a paper coffee filter for a completely clear concentrate without sediment.

Store and serve: Cold brew concentrate keeps in the fridge for up to 2 weeks. Serve 1:1 with water or milk over ice for a standard cup, or drink straight for a strong concentrate. Perfect for batch preparation.
